A
Sommelier (suh-mal-'yAy) is a trained and
knowledgeable wine professional
who
specializes in all facets of
wine service and is formally trained in
wine tasting, culinary pairing,
procurement, storage,
cellar
rotation,
and the
creation of wine lists. Most
high-end culinary establishments
contract at least one sommelier
to assist with the taste
preferences and budget
parameters of their clients.
Sommeliers are also responsible
for the overall training and
delivery of wine services. Working
closely with the front-of-house
service staff, a Sommelier
defines the level of
wine
service by providing thorough
training in wine etiquette
including proper decorking,
bottle presentation, and
pouring.
A Sommelier
also works closely with the
Executive Chef suggesting
suitable wines that best
compliment each particular menu
item.
In fact,
it can be argued that the
role of a Sommelier is
strategically as important as
that of an Executive Chef.
